Couscous Salad Bowl

With Hot Girl Summer preparations in full swing, I’ve been struggling to come up with tasty nutritional meals to eat. I used to think of healthy food as bland chicken breasts, soggy broccoli & hard-boiled eggs stuffed into a bowl but after doing some research I’ve come up with some really great ways to make my meals tasty while still being incredibly healthy. It’s important to note that I’m not as committed as I’d like to be to this diet (LOL) but when I am, this recipe is one my favourites because of how easy it is to make. There’s not much standing over the stove needed & most of it is just chopping up your ingredients and throwing them into a bowl. This dish is also very versatile; it makes a great lunch, light supper or a side dish depending on what you needed . I love a meal that can be different things depending on what I’m in the mood for. I can have it today as a lunch then add some chicken strips or a salmon with it tomorrow as a side dish. I used pearl couscous for this recipe, but you can use other grains like bulgar wheat or normal light-grained couscous. 
Couscous Salad Bowl Recipe 
Recipe: 

• 1/2 cucumber diced

 • 10 cherry tomatoes quartered 

• 1/2 an avocado

 • 1 cup pearl couscous

 • feta cheese (as desired) 

• chopped coriander 

• juice of 1/2 a lime 

• olive oil 

• salt and pepper to season 
Method: 

1. Boil your pearl couscous in salted water for about 10-15 minutes or until soft 

2. Chopped up all your veggies & add to a bowl 

3. Season with salt & pepper 

4. Drizzle with olive oil & add your lime juice & mix.
